A few months ago I came across a recipe for super easy pumpkin muffins. Easy meaning two ingredients: Spice cake mix and canned pumpkin. While I loved the simplicity of the recipe, I wanted a little bit more moisture in my muffins. So today I did a little experimenting and we loved this new version of banana-pumpkin streusel muffins. They are so soft and moist and yummy! Don't let the cake mix throw you off, these are a new favorite at our house.
I doubled the batch and made half of them with chocolate chips, and half of them without. Both were great.
Banana Pumpkin Streusel Muffins
Preheat oven to 350
Muffin Ingredients:

- 1 Spice Cake Mix
- 2 Ripe Bananas
- 1/2 can pumpkin
- 1/2 cup Applesauce
- 1 tsp vanilla
*Optional: add chocolate chips
*Another fun variation: If you aren't using this recipe for breakfast, Skip the Streusel topping and top your muffins with cream cheese frosting for a yummy cupcake!
Using a mixer, combine your cake mix, pumpkin, bananas (mashed), applesauce and vanilla. Mix just long enough to get a nice batter.Â
Grease your muffin pan or line with muffin liners. Pour 1/4 cup muffin mix into each muffin tin. Top with your streusel crumbs.
Streusel Topping:
- 1 1/2 Tablespoon cold butter
- 1/3 cup flour
- 3 Tablespoons brown sugar
- 1/2 tsp cinnamon
Using a fork (or your fingers) mix the flour and sugar into your butter until you get a nice crumbly mixture. Crumble on top of your muffins, and place muffins in the oven. Bake for 15-18 minutes.

I read your posts about coconut oil. I’m crazy about it and use it in everything, although I’ve never ingested it or used it to cook with, which is my next goal. I decided to comment here because those posts are several years old and I wasn’t sure if you’d get my reply. I’m sure you already know this, however it wasn’t mentioned and I didn’t see it on the picture of the oil you use. But, it’s really important to use cold pressed oil, as that method aids in retaining the nutrients. : )
