I crave this Granola ALL year long… but especially during Fall time!
Granola: warm, chewy or crunch, cozy, deliciousness. Â What else could a girl ask for? Â The best night is putting the kids to bed, and then sitting in front of the fireplace with the Mr. while chatting and savoring a delicious bowl of home made Granola!

Homemade Granola Recipe
Ingredients:
- 10 cups quick cook oats ( I split and do 5 cups quick oats and 5 cups old fashioned Oats)
- 2 cups coconut (or more because I love coconut)
- 1 tsp salt (I know it calls for 1 Tbls. but that's always WAY too much for me.)
- 1 Tbls cinnamon (or 2 because it's fall and cinnamon is a fall staple in my house)
- 1/2 tsp nutmeg (or more because I LOVE nutmeg)
- 1 1/2 cups brown sugar
- 2 cups chopped nuts (Love sliced almonds. . . and have done pecans before too).
- 1 1/2 Tbsp. vanilla
- 2/3 cup water
- 1 1/2 cup oil (I usually use olive oil or coconut oil, or I split it and do both)
Mix first 7 ingredients together in a big pan. Â I usually use an aluminum huge pan. . . and I always make 1 1/2 the recipe. Â It's a HUGE mixture!!! Â But well worth it!
Add vanilla to the water and pour over the mixture.
Pour oil over cereal and mix till there are no lumps.
Bake at 300 till brown. Â About 1 hour (so the recipe says. . . I usually bake mine for about 2.5-3 hours. Â I like it crunchy) stir every 15-20 minutes.
Cool and add raisins, craisins or any dried druid your little heart desires.
I'm so glad I've already made mine. Â I'm want a bowl right now just thinking about it. Â Go make yours as soon as you can!
P.S. I originally did this because I was going to hand mop my floors.  However, I thought, I'm going to make granola this weekend.  And if I'm going to make granola this weekend… I am not going to mop now.  So we flipped our schedule and made granola first and then mopped.  Thank goodness, because my little helpers love to make granola with me, and I always LOVE their help.
First: Oats 10 cups
2: 2 cups coconut
3: 1 tsp salt
4: 1 Tbls Cinnamon
6: 1 1/2 cup brown sugar
7: 2 cups chopped nuts
Mix!
and roll with a rolling pin of course!
8: mix 1 1/2 Tbls vanilla & 2/3 water . . . pour over mixture
Mix well. Â Make sure all is coated!
Add the melted coconut oil or olive oil (1 1/2 cups)
Mix well again.
Bake at 300 degrees for 1-3 hours depending on how chewy or crunchy you'd like it. Â Stir every 20minute intervals so that the top doesn't burn and the edges don't get to crispy.
WA LAH! Â Deliciousness all around. Â In your bowl, the aroma of your house, on your floor, in your mouth! Â YUM!!!
