Salads for dinner aren’t typically my favorite since they don’t feel me up, unless of course it’s a good chicken salad recipe that has chicken and black beans. The other night was one of those nights that I had no clue what to make for dinner and I needed something simple. I looked in the fridge and found tomatoes, olives, carrots, and this salad mix that needed using:
So I asked my husband if he would pick up a rotissoire chicken, we mixed everything together, named our meal “Rotissoire Chicken Salad,” and all was well again at our house.
Rotissorie Chicken Salad Recipe
I feel weird calling this a recipe since it’s a salad, but here’s the ingredients I used:

Lettuce (I used Costco’s organic spring mix)
Shredded carrots
Sliced olives
Black beans
Diced tomatoes
Shredded Cheese
Rotissoire Chicken (cut up in bite-sized pieces)
*bell pepper, cucumber, avacado, or green onions might also be good in this salad…but I just used what I had on hand.
I mixed my lettuce, cheese, and carrots together and left everything else on the side to be added on to each plate so that I could pack leftovers for my husband’s lunch without it being soggy the next day.
Rotissoire Chicken Salad Dressing
I just used ranch that we had in the fridge, but if you wanted to make this a Southwestern salad you could add chips and corn to the salad and use southwestern dressing (equal parts ranch & BBQ sauce, or mayonnaise/plain greek yogurt mixed with equal parts ranch & taco seasoning).
Surprisingly, even the toddler enjoyed it! I use kitchen shears to cut her salad up into teeny tiny micro pieces so that the “lettuce texture” doesn’t turn her off 🙂

One of my favorites is this Southwestern chopped Chicken Salad recipe that I found on Pinterest. Maybe next time I’ll just throw the Rotissoire chicken straight into this recipe and see how I like it Southwestern style!
