I am excited to share these Stuffed Mushrooms with you today. With Thanksgiving just around the corner, you will be set with an elegant yet easy appetizer for your crowd! My family would make these every Thanksgiving, and in high school I quickly stole the title of Mushroom Maker (mostly so I could pick at the stuffing while no one was looking.) Now my crew begs me to make these every Thanksgiving, Christmas, New Years, Thursdays, etc. They are a sure hit and a big crowd-pleaser. Bonus: if you don’t like mushrooms (I can’t stand the things), the stuffing goes great with crackers! Enjoy – and don’t forget to visit me at The Coconotes!

- 20-30 large mushrooms, rinsed and cleaned out
- 1 heaping cup sour cream
- 1 heaping cup mayonnaise
- 3 green onions, chopped
- 1 bag croutons, original flavor (the smaller, the better)
- 1 cup cheddar cheese, shredded
24 hours before chow time, mix 1/2 cup sour cream, 1/2 cup mayonnaise, green onions, croutons, and cheese. Stir to combine. Cover and refrigerate for several hours. Mix remaining sour cream and mayonnaise with the stuffing, and scoop spoonfuls into mushrooms (or onto crackers.) Bake at 350 for 10-15 minutes. Serve and enjoy!
