Why does dinner-time have to be the busiest time of day? Homework to be done, piano to be practiced, sports to be played, etc. etc. etc! Some days all I feel like whipping up is a nice bowl of cereal for dinner! Well, these nachos are so easy to put together, and perfect for a busy family going here and there all evening long. Keep the pork warm and serve it up as they come and go. They will leave very satisfied and happy!

Pulled Pork
- 2-3 lb. pork shoulder roast
- 3/4 cup ketchup
- 1/4 cup water
- 1-2 tsp. Louisiana hot sauce
- 1 tsp. liquid smoke
- 2 tsp. mustard
- 1 tbsp. molasses
- 1 tbsp. chili powder
- 1 tbsp. dehydrated onion flakes
- 2 tsp. garlic powder
- 1 tsp. black pepper
- 2 tbsp. white vinegar
Place roast in greased slow-cooker. In separate bowl, combine remaining ingredients. Pour over roast and cook on low for 6-7 hours. Shred pork, and mix with sauce. Cook 1 more hour.
Nachos
The following ingredients are just suggestions. I used most of these, but you can of course add or take away any ingredients you like.
- Tortilla chips
- Cheddar or Monterey Jack cheese, shredded
- Pulled pork
- 1 can black beans, warmed on stove-top
- Pico de gallo, or salsa
- Guacamole
- Sour Cream
- Crumbled bacon
- Green Onion
- Olives
- Cilantro
To assemble the nachos, place chips on a plate and cover with shredded cheese. Cook in microwave or oven until cheese is melted. Top with pork, black beans, salsa, guacamole, sour cream, bacon, green onion, etc. Enjoy!
